Jump to RecipeWhat is Dubu Kimchi?
Dubu kimchi (두부김치) is a Korean dish that consists of very fermented kimchi sauteed with pork. It is paired with steamed, boiled, or pan-fried firm tofu.
It’s a great combination of intense flavor from the kimchi coated in the savory taste of the pork. The slight hint of sweetness and spiciness truly elevates the flavor. Tofu gives a subtle flavor contrast with its soft texture. It’s basically a flavor and texture celebration in a mouthful!
Dubu kimchi (두부김치) is typically enjoyed with Korean soju or makkoli. I personally like makkoli but you can omit this if you’d like.
Can You Save It for Later?
It’s best to enjoy the dish immediately after it’s been served. Although you can save any leftovers in the refrigerator and just microwave it.
Alternative to Pork
You can replace pork with shitake mushrooms. While pork is traditional, it can be altered to one’s preference.
