Bibim Guksu Recipe (Korean Spicy Cold Noodles)

Bibim-guksu recipe is simple to make. The sweet, vinegary, and spicy flavor combination is refreshing, especially on warmer days!

You can add your favorite veggies in bibim-guksu, such as

  • Carrots
  • Radish
  • Lettuce
  • Cucumbers

It’s easier to eat if the vegetables are cut similar length and/or shape as the noodles.

Bibim guksu

Ingredients
  

  • 1 serving of thin wheat noodles
  • 1/4 cucumber
  • 2 boiled eggs
  • 1 tsp roasted sesame seeds
  • 1 tsp sesame seed oil
  • 1/4 cup chopped kimchi
  • 1/3 cup gochujang (Korean red pepper paste)
  • 1/4 cup vinegar
  • 2 tbsp sugar
  • 1 tsp gochugaru (Korean red pepper flakes)
  • 1 tbsp soy sauce
  • 1 tbsp minced garlic

Instructions
 

  • Boil water and add noodles. Stir continuously and cook for 2-3 minutes or until soft

  • Strain out the noodles and quickly rinse under cold water. Set it aside.
  • Chop cucumbers into long strips. Set aside.

  • In a bowl, mix gochujang, vinegar, sugar, gochugaru, soy sauce, and minced garlic
    1/3 cup gochujang (Korean red pepper paste), 1/4 cup vinegar, 2 tbsp sugar, 1 tsp gochugaru (Korean red pepper flakes), 1 tbsp soy sauce, 1 tbsp minced garlic
  • Cut boiled eggs in half
    2 boiled eggs
  • In a bowl, cut kimchi
    1/4 cup chopped kimchi
  • In a bowl, add noodles, sauce, cucumbers, eggs, sesame seed oil, and sesame seeds
    1 tsp roasted sesame seeds, 1 tsp sesame seed oil
