I often make this mini cake recipe for one. Why? Because while my husband doesn’t love sweets, I do. Sometimes, you just want a bite of sweetness.
Although making a full 8″ cake is too much for one person, even if you refrigerate it. That’s where a mini cake comes in handy.

Ingredients
Here are the ingredients and measurements needed
Cake
- 1 cup cake mix, any kind you like
- 1/4 cup milk or water
- 1 egg
- 1 tbsp oil or melted butter
- 2x 4″ cake pans. You can use 1 but you will have some batter leftover
Frosting
I love whipped mascarpone cream. It tastes delicious and it holds its form well. Although you can use buttercream. I have both recipes!
Whipped Mascarpone:
- 1/2 cup whipped cream, cold
- 2 tbsp mascarpone cream, cold
- 1/4 tsp vanilla extract
- 1/4 cup powdered sugar
Vanilla Buttercream
- 2 tbsp room temperature butter
- 1/4 tsp vanilla extract
- 1/2 cup powdered sugar
- 1 1/2 tsp milk
How Long Do You Bake Mini Cakes?
For 4″ round cake pans, 20-25 minutes at the temperature the cake mix box recommends. Cool it for 10 minutes.
Since it’s a small cake, it doesn’t take long to bake and cool.
How Many Does a 4 inch Cake Serve?
1-2 people, depending on how much one eats.

Mini Cake for One Recipe
Ingredients
Cake
- 1 cup cake mix, any flavor
- 1/4 cup water or milk
- 1 egg
- 1 tbsp oil or melted butter
Mascarpone Whipped Cream
- 1/2 cup cold whipping cream
- 2 tbsp mascarpone cheese
- 1/4 tsp vanilla extract
- 1/4 cup powdered sugar
Instructions
- In a bowl, combine cake mix, water or milk, egg, and oil or melted butter1 cup cake mix, any flavor, 1/4 cup water or milk, 1 egg, 1 tbsp oil or melted butter
- Grease the baking pan(s) and pour the cake batter
- Bake at the temperature stated on the cake mix box for 20 minutes
- Remove the baked cake and set it to cool for 10-20 minutes
- In a bowl, combine whipping cream, vanilla extract, and powdered sugar1/2 cup cold whipping cream, 1/4 tsp vanilla extract, 1/4 cup powdered sugar
- Whip on high until soft peaks form
- Add mascarpone cheese and whip until stiff peaks form2 tbsp mascarpone cheese
- Top it off with the whipped mascarpone cheese, layered with fruits or jam
