Hobak Bokkeum (Stir-fried Zucchini) is a common and delicious side dish. You may have had it in your bowl of bibimbap.

As a kid, I enjoyed eating it because zucchini had a mild flavor for a vegetable. My grandmother made it often at home. For an odd reason, I only remember her topping it with roasted sesame seeds. I don’t recall the other parts.

Ingredients

  • 1 zucchini
  • 2 tsp salt, fish sauce, or salted shrimp/krill
  • 2 tbsp water (if the pan is dry)
  • 1 tsp minced garlic
  • 1 green onion, chopped
  • 1 tsp sesame seed oil
  • 1/2 tsp roasted sesame seeds
  • cooking oil

How Long It Will Last in the Fridge

I recommend consuming it within a week, at most. Always keep it refrigerated. It can be eaten cold.

Ingredients
  

  • 1 zucchini
  • 2 tsp salt, fish sauce, salted shrimp/krill
  • 1 tsp minced garlic
  • 1 green onion, chopped
  • 1 tsp sesamse seed oil
  • 1/2 tsp roasted sesame seeds
  • 1 tsp cooking oil
  • 2 tbsp water, if pan is dry during cooking

Instructions
 

  • Wash zucchinin and cut into half-moon shapeds
    1 zucchini
  • On a pan, add cooking oil, zucchini, garlic, and salt
    1 zucchini, 2 tsp salt, fish sauce, salted shrimp/krill, 1 tsp minced garlic, 1 tsp cooking oil
  • Saute for 3 mintues
  • Add 2 tbsp of water if pan is dry
    2 tbsp water, if pan is dry during cooking
  • Add green onion, sesame seed oil, and roasted sesame seeds
    1 green onion, chopped, 1 tsp sesamse seed oil, 1/2 tsp roasted sesame seeds
  • Cook until zucchini is soft. Be carefu not to over cook it or it will turn into mush
