The Alaska pollock is considered the national fish of Korea. It is frozen and thawed repeatedly in the cold winter winds until they become dried and yellow in color.
It’s generally sold dry but doesn’t have a strong fish scent. The flavor is savory and wholesome.
Is Pollock Good for You?
It’s known to be rich in protein and amino acids. This has a detoxifying and soothing effect. The reason why it is often consumed for hangovers in Korea.
The soup is generally quick and easy to make. You just need to saute the pollock in sesame seed oil, boil it in water. That is the absolute bare minimum!
You can certainly add an egg, Korean radish, green onions, garlic, tofu, etc!

Dried Pollock Soup Recipe (북어국)
Ingredients
- 3 cups water
- 1 oz dried pollock
- 2 tsp sesame seed oil
- 2 stalks green onions, chopped
- 1/4 tofu, cubed
- 2 cloves of garlic, minced
- 2-3 tsp fish sauce, salt, or soy sauce
- 1 egg (optional)
Instructions
- In a small pot, drizzle the sesame seed oil and add the dried pollock.2 tsp sesame seed oil, 1 oz dried pollock
- Stir and saute for 3 minutes on medium low heat
- Add water, tofu, garlic, and green onions. Boil for 5 minutes2 stalks green onions, chopped, 1/4 tofu, cubed, 2 cloves of garlic, minced, 3 cups water

- Cook for another 3-5 minutes or until the egg and/or tofu are cooked
