I only started to enjoy kimchi pancakes when I was a teenager. You see, that’s when I like to eat kimchi. As a kid, I was the only one in my family who did not like kimchi. I didn’t enjoy the taste of soft cabbage, plus I couldn’t eat anything spicy. Rewind to many moons later, I’m obsessed with kimchi. My parents were proud when this day came.

One of my favorite ways to eat kimchi with through kimchi pancake. It’s great to enjoy on a rainy day or for a quick meal! It’s thin and crispy packed with bold and delicious flavor.

You can add other ingredients such as perilla leaves, squid, and red pepper. As long as you have kimchi, you’re golden.

Korean kimchi pancake is great when you need to use up your super fermented kimchi. It’s also a very simple and easy-to-make dish.

Simple Korean Kimchi Pancake Recipe

Ingredients
  

  • 2 cups Kimchi, chopped
  • 3/4 cup Cold water
  • 3/4 cup Korean pankcake mix flour or all-pupose flour
  • 2-3 tbsp Kimchi juice
  • 1/2 cup Shirmp, chopped optional
  • 1 tbsp Red pepper paste (gochujang)
  • 2 tbsp Green onions, chopped
  • 1/4 cup Onions, diced optional
  • 1/2 tsp Sugar
  • 1 tsp Cooking oil

Instructions
 

  • In a mixing add, add water, kimchi juice, sugar and gochujang. Mix together
    3/4 cup Cold water, 2-3 tbsp Kimchi juice, 1 tbsp Red pepper paste (gochujang), 1/2 tsp Sugar
  • Add the flour and mix
    3/4 cup Korean pankcake mix flour or all-pupose flour
  • Add kimchi, shrimp, green onions, and onions. Mix together.
    2 cups Kimchi, chopped, 1/2 cup Shirmp, chopped, 2 tbsp Green onions, chopped, 1/4 cup Onions, diced
  • The batter should be like a thick pancake mix. Add more water or flour if needed.
  • On a frying pan, add the oil
    1 tsp Cooking oil
  • Add 1/4 cup of batter and spread it thin
  • Cook the bottom for 3-5 mintues or until brown and crispy
  • Flip and cook the other side for 2 more minutes or until brown adn cripsy
  • Set aside the cooked pancake and cook rest of the batter
