What are Mayak Eggs?

Mayak gyeran (마약계란) literally means “drug eggs”. Don’t worry, the name is purely metaphorical! The dish is extremely delicious and addicting that you keep wanting to eat more! The combination of sweet and savory flavors with jammy center eggs mixed with rice is pure bliss.

Ways to Eat

Soy marinated eggs are a simple combination of primarily soy sauce, water and sugar. If you want to spice it up, add chilies such as Thai chili’s (my favorite) or jalapeños. Onions are optional but I add them since I love them. Marinate the eggs at least 4-6 hours. 24 hours for peak flavor. Consume the eggs within 3-5 days of making them.

My favorite way to eat Korean marinated eggs is to mix some of the sauce with rice. It’s just a simple and very flavorful dish.

If you’re reusing the liquid for a second batch of eggs, it’s a great idea to bring the marinade to a quick boil first, then let it cool completely before adding the new eggs. This kills any bacteria from the first round and keeps the sauce fresh for another 5 days.

Korean Marinated Eggs (Mayak Eggs)

Ingredients
  

  • 6 eggs, soft boiled and peeled
Sauce
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 1 tbsp sesame seeds
  • 1-2 tbsp sugar, brown sugar, corn syrup, and etc
  • 1 tbsp sesame oil
  • 1/4 white or yellow onion, chopped
  • 3 stalks of green onions, chopped
  • 3 cloves of garlic (optional)
  • 3 green or red pepper (optional) can use jalapeños

Method
 

  1. Steam or boil 6 eggs for 6-7 minutes for soft-boiled eggs.

  2. Immediately place the eggs in an ice bath and allow them to cool for 2 minutes.
  3. Add the sauce ingredients to a bowl and mix until fully combined.
    1/2 cup water, 1/2 cup soy sauce, 1-2 tbsp sugar, brown sugar, corn syrup, and etc, 1 tbsp sesame oil, 1/4 white or yellow onion, chopped , 3 stalks of green onions, chopped , 3 cloves of garlic (optional), 3 green or red pepper (optional)
  4. Place the peeled eggs in an airtight container and pour the sauce over them.
  5. Refrigerate and allow the eggs to marinate for 4–6 hours before eating.

Notes

Consume Korean marinated eggs in 4-6 days
