Galbi is a strip of beef short rib that is a flavor explosion upon the first bite. It’s sweet, salty, and smoky. The true flavor comes from the sauce. The basics are garlic, sugar, and soy sauce. Although the key is the balance of each ingredient.
To make it easy, Korean food brands sell pre-made galbi marinades. This makes the cooking process easier and faster. The flavor is still delicious. Try the recipe for yourself!
Recipe
Ingredients
- 2-3 pounds of beef short ribs
- 1 onion, sliced
- 4 green onions, sliced
- 1 jar of galbi or kalbi marinade (My favorite: CJ Korean BBQ Sauce)
- 1 pack or 3 king oyster mushrooms, sliced
Direction
- Soak the meat in cold water for 20 minutes
- Drain the water and rinse the beef under cold water
- In a large bowl, add a jar of marinade, sliced onions, green onions, and mushrooms.
- Place the meat in a large casserole dish or bowl, and pour over the sauce
- Coat each slice of meat well
- Let it marinate in the fridge for at least an hr, better if more.
- Cook on the stove or grill. Turn frequently to avoid burning.
To get the smoky flavor, it’s best to cook it over a grill.

Serving Ideas
You can eat it however you like. I just have it over rice and kimchi. Some wrap the meat with leaves, green onions, and other vegetables with a dollop of saamjang.
Some just eat the meat by themselves.
