Hobak Jeon Recipe (Korean pan-fried zucchini)

Hobak jeon (호박전) is a classic Korean side dish. They’re typically eaten with a meal, taken to picnic or packed lunch, etc.
They’re fancy enough to be part of holiday family gatherings! The best part is that they’re pretty simple to make. You really need zucchini, egg, flour, oil, and salt.
My mom made this often growing up. Mainly because I did not like vegetables. I still don’t love it but consume it a lot more as an adult.
How to Store It
Put any leftover in Tupperware and refrigerate it. You can reheat it in the microwave but the preferred way is using a toaster, air fryer, or pan-fry. Just to get the crispy top.
Number One Tip
Don’t overcook it! It doesn’t take long to cook zucchini slices, Plus they’re vegetables so they don’t have to be cooked like chicken.
Just pan-fry it enough that the egg coating is cooked.
Hobak Jeon Recipe
Ingredients
- 1 Korean or other small zucchini
- 1/4 cup Flour (all-purpose, Korean flour, tapioca flour, etc)
- 2 Eggs
- Salt
- Cooking oil
Instructions
- Rinse the zucchini and cut into 1" coin-shape slices1 Korean or other small zucchini
- Lay them flat. Lightly sprinkle salt on top and let it sit for 5 mintuesSalt
- On a plate, add flour1/4 cup Flour (all-purpose, Korean flour, tapioca flour, etc)
- On another plate, crack eggs and add 1/4 tsp of salt. Whisk to combineSalt, 2 Eggs
- Add cooking oil in a frying panCooking oil
- Follow this step for each zucchini slices. First, coat it in flour. Second, coat it in egg (make sure it's fully covered in egg). Third, add it to the frying pan=
- Flip when the bottom is lightly brown
- Cook for another 2 minutes or until both sides are lightly brown
