The secret to delicious sweet soy-braised baby potatoes or Algamja-jorim is a crunch outer layer and a soft and fluffy inside.

It’s a great side dish! Perfect those who do not eat spicy food. I personally love this side dish because I like sweet food and potatoes. It doesn’t get any simpler than that.

You can make these ahead of time, store in the fridge, and eat them within a week or so. You can heat them up before eating or have it cold, my favorite way.

Soy Braised Baby Potatoes – Algamjajorim

Sweet and savory crunchy and soft potatoes great to have as a side dish!

Ingredients
  

  • 1 lb baby potatoes
  • 3/4 cup water
  • 2 tbsp sugar
  • 4 tbsp soy sauce
  • 1 tbsp minced garlic
  • 1 tbsp corn syrup
  • 1 tbsp sesame oil
  • Cracked black pepper and roasted sesame seeds

Method
 

  1. Rinse and drain your potatoes and remove any rotten ones
    1 lb baby potatoes
  2. Parboil the potatoes for 5–7 minutes, until just slightly tender. Drain well and set aside.
  3. Make the sauce and set it aside
    3/4 cup water, 2 tbsp sugar, 4 tbsp soy sauce, 1 tbsp minced garlic
  4. In a shallow pan, add cooking oil and drained baby potatoes. Pan-fry the potatoes for 5 minutes on medium-heat.
  5. Add the sauce, bring it to a boil, then cover and let it simmer for 15–20 minutes. Liquid may reduce – that's fine!
  6. Turn off the heat. Drizzle in the corn syrup and mix well. The sauce will become glossy and may thicken slightly as it cooks.
    1 tbsp corn syrup
  7. Drizzle sesame oil, sprinkle roasted sesame seeds and black pepper. Enjoy!
