Recommend to use Korean or Asian eggplants that are longer and skinnier than larger globe eggplants. The skin is thinner so easier to eat it.
If you don’t have access to Asian eggplants, you can use the larger globe eggplants. May want to shave off some of the skin.
How Long to Store It
Store any leftovers in an air-tight container and refrigerate them. Try to consume it in 3 days, as it may get watery over time.

Ingredients
- 2 Asian eggplants
- 3 1/2 tbsp Soy sauce
- 3 1/2 tsp Sesame seed oil
- 2 tsp Garlic, minced
- 1 Green onions, chopped
- 2 tsp Oyster sauce Use salt and sugar as alternative
- 2 tsp Gochugaru (Korean Red Pepper Flakes) Omit for non-spicy version
- 2 tsp Roasted sesame seed oil
- 2 cups Water
Instructions
- Bring water to a boil in a pot for steamer2 cups Water
- Rinse the eggplants and cut them into 2 inches lengthwise2 Asian eggplants
- In a small bowl, mix soy sauce, sesame seed oil, minced garlic, green onions, oyster sauce, gochugaru, and roasted sesame seed3 1/2 tbsp Soy sauce, 3 1/2 tsp Sesame seed oil, 2 tsp Garlic, minced, 1 Green onions, chopped, 2 tsp Oyster sauce, 2 tsp Gochugaru (Korean Red Pepper Flakes), 2 tsp Roasted sesame seed oil
- Add the eggplants in the steamer and steam for 5 minutes
- Removed steamed eggplants
- Add to a large bowl and mix with the sauce until well combined
